So, it seems that spelt flour makes a pretty good pizza crust.
I started out thinking I was going to make a foccacia to go with some pasta, but decided we hadn't had pizza for such a long time, that I should do just that...make a pizza.
Pizza Crust
1 package yeast
1 cup luke warm water
1 t agave (or sugar)
1 t salt
2 t oil
2 1/2 cups spelt or your choice of flour
Dissolve yeast in water with agave (sugar), mix in oil, salt and flour. Let rise 5 minutes. Add flour to make dough easy to form into a round pizza crust. Add whatever you're putting on top. Bake at 400 degrees for about 10 minutes or until the top is how you like it.
I put tomato sauce, onion, black olives, broccoli, red peppers, fresh spinach, fresh basil, Italian seasoning, rosemary and red pepper flakes, topped with a sprinkling of asagio cheese. You can use parmesan or romano if you'd like. Mozzarella would be good too, but since I've been trying to cut out dairy, the sprinkling of asagio was a good choice.

Tell John that while he's making it, to roll the crust out until it's thin enough for him. Please take a picture of his pizza and send it to me!

Yummmm, that looks delicious. I love cheese, but your pizza looks great even though it just has as "sprinkling."

June I copied this recipe and I'm going to try it while Noah's here.
When he was in the middle east I baked those dariy free, wheat free, sugar free cookies for him,although Bob and I liked them alot, Noah said they must have lost something in the travel, because they didn't go over to well with the guys.
