Without getting into too much detail, Nick and I are trying to cut out dairy, wheat and refined sugar from our diet. This was on the advice of my acupuncturist. It hasn't been very hard, although ocassionaly we both would like some sort of dessert. I have made ice cream from coconut milk before, but always with sugar. With only a few ingredients, I was able to make chocolate ice cream (truthfully, chocolate is not my favorite, but I knew I could get Nick to eat it if it was).
The ingredients
Chocolate Coconut Milk Ice Cream
3 cups of unsweetened coconut milk (about two cans)
2/3 cup of cocoa powder
6 tablespoons agave syrup
1 teaspoon vanilla extract
Whisk
cocoa powder in a small amount of coconut milk, until smooth. Then add
the rest of the ingredients and whisk until well combined. Or dump all
ingredients together and blend with a stick blender. Make according to
your machines instructions.
